'ORGANIC FIELD-RANGED EGGS'

Raised on the Adirondack Coast, our hens are cooped at night and are free to roam and forage our 64 acre farm during the day. Happy hens make the best eggs and these girls are very happy! We supplement their foraged diet with organic grains and spring water. Should one of our hens fall ill, we pull her out of the flock and tend to her until she is well again.

Our ducks are raised similarly. They have their own pond to frolic around in and they sure do love to frolic! They also enjoy just floating around and hanging out on their private island where they can safely sleep the day away. At night, they all march in to their secure pen where they lay their delicious eggs for us.

All eggs are sized by minimum weight:
     Small........49g or less
     Medium....50g
     Large........57g
     X-large.....64g
     Jumbo......71g
     King.........78g

Hen eggs are sold by the dozen. Flats of 20 and 30 can also be ordered.
Duck eggs are sold in cartons of 4 eggs.

A freshly laid egg that is clean and gently processed will safely last for up to three weeks without any refrigeration. In the refrigerator, they will easily last for six weeks! Eggs can be frozen by cracking them into ice cube trays, freezing them, then turning them out and storing in Ziplock bags. They are good for six to nine months prepared this way. Eggs can be hard boiled and pickled, separated and the whites and yolks dried separately, and even bottled in glycerin!

Because we keep flocks of mixed breeds of birds, eggs will vary in shell color. The egg's color is determined by the final pigment layer applied to the shell just before laying. Color has NO CORRELATION to nutrient value and all eggshells are white on the inside. Throughout her life, a hen will secrete less and less pigment onto her eggshells and her egg color will lighten.

A laying hen may continue to produce eggs for up to 5-7 years if she is healthy, well cared for, and a breed that has longevity in its genetics. Her best laying years are the first two years after she begins to lay. After that, she will slow down and lay fewer eggs per year, but those eggs will likely be larger than when she was a younger hen. We allow our hens to age on the farm regardless of their laying capacity. All of our birds are treated with respect and provided with a healthy and safe environment in which to live.

We have chosen to sell our eggs in craft-paper boxes which we assemble and pack by hand ensuring each egg has a final inspection before resting in a nest of organic packing excelsior.
